My Favourite Winter Recipes

In my last post, I wrote about the importance of staying hydrated through the winter months. Besides drinking enough water, we can stay hydrated by filling our bodies with fluid-rich foods such as soups, stews, fruits and vegetables.
I compiled a list of some of my favourite recipes to make during these cold months.
Puerto Rican Chicken Stew
This recipe is packed full of flavour and warmth. Although it's not how the recipe suggests, I typically dump all the ingredients in the crockpot in the morning and come back to a delicious meal for supper.

Beef Enchiladas
We have enchiladas on a weekly basis. They are simple, hearty, and I tend to pack in a bunch of vegetables into the enchilada filling for added fiber and flavour.

Tuscan Sausage Gnocchi
This recipe is bowl-licking' delicious! I like to use a turkey sausage and, like most recipes, I boost the veg by adding in some colourful peppers.

Shakshuka
One pan, budget friendly, yummy. Need I say more? This is a must try.

Crockpot Cabbage Roll Soup
Protein, loads of veg and rice for energizing carbohydrates. This soup has it all.
