Peanut Butter Banana Oat Bars

This recipe makes for a quick and nutritious snack option for the whole family, including your little ones who are working on their eating skills. With no added sugar and lots of fiber, these bars are also soft enough (like a muffin), they are a great finger food for babies and toddlers. They can be part of a meal, paired with fruit or some yogurt or on its own for a nutritious snack. This recipe is also great to make with your kids. My one year old just helped me make these and I didn't have to worry about keeping him from taste testing because the recipe is free from eggs and safe to eat before baking.
Ingredients:
1.5 cups mashed ripe banana (about 3 medium bananas)
1/2 cup peanut butter or almond butter
1/2 cup milk
1 tsp vanilla
1 1/4 cup oat flour
3/4 cup oats (for babies, minute/instant oats work better because they are chopped finer)
1 tsp baking powder
1/2 cup raisins
Instructions:
Preheat oven to 350 degrees F. Line an 8x8 baking dish with parchment paper.
In a large bowl, mix together all the ingredients until combined.
Transfer mixture to the baking dish and spread out evenly.
Bake for 25 minutes until golden brown on top. Should be a muffin-life texture.
Allow to cool before cutting into bars or squares.
